Ali Casparian of Bounty & Soul is sharing holiday recipes with Black Mountain News readers each week through Christmas Eve. Each recipe is easy as it is delicious and nutritious.

Today we feature Sweet Potato Guacamole. Coming are Kale and Butternut Squash Stuffing (Dec. 10), Brown Rice or Quinoa Apple Stuffing (Dec. 17) and Warm Kale and Sweet Potato Salad (Dec. 24). The recipe for Nov. 26 was Butternut & Apple Bisque.

Sweet Potato Guacamole

3 cooked sweet potatoes

2 scallions

1/2 large tomato

1/4 cup cilantro

2 teaspoon lime juice

1/4 teaspoon sea salt

Dash cumin

Dash hot sauce

Ripe avocado

Spoon out sweet potato and mash in bowl. Chop scallions, tomato and add to sweet potato mixture. Mince garlic and cilantro. Add to mixture. Add lime juice, sea salt to taste, cumin and hot sauce. Fold in diced avocado. Serve with blue corn chips or raw veggies and salsa.
